Gluten-Free Slow Cooker Lasagna Soup
Indulge in all the flavors of classic lasagna in a comforting, gluten-free soup form. This slow cooker recipe makes dinner preparation a breeze!
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 28 oz crushed tomatoes
- 1 can 15 oz tomato sauce
- 4 cups gluten-free beef broth
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 10 gluten-free lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish optional
Instructions:
In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is translucent
Drain excess fat
Transfer cooked beef mixture to a slow cooker
Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper to the slow cooker
Stir to combine
Cover and cook on low for 6-8 hours or high for 3-4 hours
About 30 minutes before serving, stir in broken lasagna noodles
Cover and continue cooking until noodles are tender
Once noodles are cooked, ladle soup into bowls
Top each serving with shredded mozzarella and grated Parmesan cheese
Garnish with fresh basil leaves if desired
