Pink Little Cake: Homemade Marshmallow Lollipops
Ingredients:
- 3 cups granulated sugar
- 1 cup water
- 1 cup corn syrup
- 4 packets 1 oz each unflavored gelatin
- 1 cup cold water
- 1 teaspoon vanilla extract
- Pink food coloring
- Lollipop sticks
- Powdered sugar for dusting
Instructions:
In a saucepan, combine granulated sugar, 1 cup of water, and corn syrup
Stir over medium heat until the sugar dissolves
Insert a candy thermometer into the mixture and cook without stirring until it reaches 240F 115C
This is the soft-ball stage
While the sugar syrup is cooking, bloom the gelatin in 1 cup of cold water
Stir and let it sit for a few minutes until it thickens
Once the sugar syrup reaches 240F 115C, remove it from heat and carefully pour it into the bloomed gelatin
Be cautious as it may bubble up
Using an electric mixer, beat the mixture on high speed until it becomes thick and fluffy
This may take about 10-15 minutes
Add vanilla extract and a few drops of pink food coloring to the marshmallow mixture
Beat until well incorporated and you achieve the desired color
Prepare a lollipop mold or line a baking sheet with parchment paper
Dust with powdered sugar
Using a greased spatula, transfer the marshmallow mixture to the prepared mold or baking sheet, spreading it evenly
Insert lollipop sticks into the marshmallow mixture before it sets
Let it sit at room temperature for a few hours or until it's completely set
Once the marshmallow has set, you can remove it from the mold or cut it into lollipop shapes if you used a baking sheet
Dust the marshmallow lollipops with additional powdered sugar to prevent sticking
