Keto Creamy Chickpea Hummus
This creamy cauliflower hummus is a low-carb take on traditional chickpea hummus. It's full of flavor and great for snacking or having people over on a low-carb diet.
Ingredients:
- 2 cups cooked cauliflower florets
- 1/4 cup tahini
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Optional toppings: olive oil, paprika, fresh parsley
Instructions:
In a food processor, combine cauliflower, tahini, garlic, olive oil, lemon juice, and cumin
Blend until smooth and creamy, scraping down the sides as needed
Season with salt and pepper to taste
Transfer to a serving dish and drizzle with olive oil, sprinkle with paprika, and garnish with fresh parsley if desired
