Mini No Bake Almond Cookies



A tasty gluten-free treat is these Mini No Bake Almond Cookies. They're quick and easy to make, and you don't even have to bake them. They're great for satisfying your sweet tooth.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut
  • 1/4 cup mini chocolate chips gluten-free
  • Pinch of salt

Instructions:

In a mixing bowl, combine almond flour, shredded coconut, mini chocolate chips, and a pinch of salt

In a separate bowl, whisk together honey or maple syrup, melted coconut oil, and vanilla extract

Pour the wet mixture into the dry ingredients and mix until well combined

Line a baking sheet with parchment paper

Scoop out small portions of the cookie mixture and shape them into bite-sized cookies

Place them on the prepared baking sheet

Refrigerate the cookies for at least 30 minutes to allow them to firm up

Once the cookies are firm, they are ready to be enjoyed

Store any leftovers in an airtight container in the refrigerator
