Thai Creamy Chicken Noodle Soup
This Thai-style creamy chicken noodle soup is free of dairy and gluten and is full of flavors like coconut, curry, and lime. It's great for a comforting meal on a cold day.
Ingredients:
- 1 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, thinly sliced
- 1 tsp grated ginger
- 1 tsp red curry paste
- 4 cups chicken broth
- 1 can 13
- 5 oz coconut milk
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 4 oz rice noodles
- 2 tbsp lime juice
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions:
In a large pot, heat coconut oil over medium heat
Add onion and garlic, saut until fragrant
Stir in red bell pepper, carrot, ginger, and red curry paste, cook for 2 minutes
Pour in chicken broth and coconut milk, bring to a simmer
Add sliced chicken breasts and rice noodles, cook until chicken is cooked through and noodles are tender, about 8-10 minutes
Stir in lime juice and chopped cilantro
Season with salt and pepper to taste
Serve hot and enjoy!
